Valentine’s Day Braised Short Ribs
You could give the predictable candies and flowers for Valentines Day but this short rib dinner is a nice alternative.
Ingredients
- 4 meaty bone in beef short ribs
- 1 tbsp salt
- 1 tsp coarse black pepper
- 2 tbsp olive oil
- 1 large onion, peeled and chopped
- 2 large garlic cloves, minced
- 2 tbsp tomato paste
- 1 cup diced plum tomatoes
- 1/2 cup red wine
Directions
- Dry the short ribs with paper towels. Combine the salt and pepper in a bowl and toss the ribs in the seasoning. Set aside.
- a stovetop to ovenproof casserole, heat the olive oil and slowly brown the ribs on all sides. Transfer them to a dish; add the onions and cook them until they are soft; stir in the garlic and cook for a couple of minutes. Add the tomato paste and coat the onions and garlic well and cook over low heat until the onion mixture is almost dark brown. Combine the tomatoes and wine and add to the onion mixture. Cook 1 minute.
- Turn off the heat. Add the short ribs to the pan and cover with a lid. Place the pan in an 325F preheated over and cook for 45 minutes to 1 hour or until the ribs are fork tender. Serve with some of the pan juices. Team it with oven roasted potatoes and your favorite vegetable.
