Weekend Mini Pizzas
Here’s a fun weekend recipe for individual mini pizza(s) using store bought dough. Toppings could be tailored to your preferences!
Ingredients
- 1 package Store bought pizza dough
- Parchment Paper
- Extra Virgin Olive Oil
- 1 cup sliced mushrooms
- 1 small zucchini cut into thin rounds
- 1 cup sliced cherry tomatoes
- 1.5 cups diced mozzarella or cheese of your choice
- Salt too taste
- Grinding Black Pepper
- Dried oregano
- Dried hot chili flakes (optional)
Directions
- Divide dough into 3 equal pieces and allow to rise until double. Stretch each piece into 8 inch long and 3 inch wide. Place them on parchment lined baking sheets and set aside.
- Heat 2 tablespoons olive oil in a saute pan and cook the mushrooms until they are lightly browned; transfer to a bowl. In the same pan cook the zucchini until it begins to soften but is not mushy. Cool.
- Brush the tops of the dough with olive oil. Divide and add mushrooms, zucchini, tomatoes on top, pressing the ingredients in slightly. Sprinkle with salt, pepper and oregano to taste. Bake until the edges begin to brown and doudh has risen. Divide and add cheese and continue baking until cheese is melted and pizza is browned on the bottom. Serve warm. Pass chili flakes on the side.
