Winter Citrus Salad

Get out of your salad rut and mix up some interesting winter salads. Think of combining lettuce greens with seasonal citrus like oranges and grapefruit and in season fruits like pears and apples. Toss in some pomegranate seeds and let winter begin!

Ingredients

  • 2 ripe Anjou, William, or Bosc pears, cut in half, cored and thinly sliced
  • 2 cups washed and drained escarole leaves torn into small pieces
  • 1 tbsp lemon juice
  • 1/2 cup broken walnut pieces
  • 1/3 cup dried cranberries
  • 1 large blood or navel orange peeled and segmented
  • Dressing
  • 1/3 cup white balsamic vinegar or rice wine vinegar
  • 1/2 cup extra-virgin olive oil
  • 1/4 tsp salt
  • 1 tbsp honey

Directions

  1. Place the pears in a shallow bowl and combine them with the lemon juice. Cover and set aside.
  2. Whisk the dressing ingredients together in a small bowl and set aside.
  3. Combine the escarole, walnuts, cranberries, and orange segments in a bowl. Pour the dressing over the top and toss well. Add the pears with the lemon juice and toss again.
