Basil and Chicken Wrap

Panino con Pollo e Basilico

Serves 6


2 cups finely minced cooked chicken

1/2 cup pine nuts

1/3 cup crumbled gorgonzola dolce cheese

1/4 cup minced red onion

Salt and pepper to taste

1/4 cup extra virgin olive oil

6 large basil leaves (or chopped and on lettuce, if not available)


Combine all the ingredients except the basil leaves in a bowl.

Divide and spread the mixture on each of the basil leaves. Roll up like a wrap. Serve with a couple of cherry tomatoes on a toothpick
