A Summer Garden Salad

Right now my garden is talking to me. Pick me! Pick me! With all the hot weather, things are coming in fast. Cherry tomatoes are ready, zucchini plants are bulging, mint is all over the place! You have to think fast! That’s how this tomato, zucchini, mint and lentil salad came to be. Sliced zucchini is quickly sautéed in olive oil; cherry tomatoes cut in half, mint minced and cooked lentils at the ready. Everything is jumbled in a bowl and olive oil,salt, pepper and vinegar is added and tossed with the veggies and lentils. Let everything mingle and serve at room temperature. So easy.
