Ten Perfect Pot Roast Tips

November 4, 2026

A beautiful pot roast takes a little patience, but the oven does much of the work. Start with the right cut, take your time browning it for rich flavor, and cook it gently until it’s wonderfully tender.

From choosing your meat to adding the aromatic vegetables, these ten tips will help you bring a comforting pot roast to the table—just the thing for a chilly day and a dinner worth gathering around.

  1. Buy the right cut…chuck, brisket or round roast is best
  2. Tie the meat with kitchen string to keep it uniform while cooking
  3. Dry the meat with paper towels before browning; wet meat does not brown
  4. Season the roast liberally with salt and coarse salt
  5. Flour the meat on all sides to help browning and create a crust
  6. Use a neutral oil for browning like avocado oil. Butter will burn.
  7. Allow enough time to brown the meat on all sides to seal in juices
  8. Cook in a heavy-duty pot with a lid, such as a Dutch oven.
  9. Add aromatic vegetables after browning the meat
  10. Oven roast in a slow oven 325F until it falls apart (internal temperature of 190 to 210 F)
