Avocado Toast Italian Style

Yes, avocados do grow in Italy, especially in Sicily, Puglia and Basilicata and although in the past, the presence of them in the Italian diet has been modest, avocados have gained world wide fame of late as a super fruit (yes, it’s a fruit) that has many health benefits and should be part of a healthy diet.
Let’s start with the popular avocado toast.
Smash the pulp of ripe avocado in a bowl with a fork and add a few drops of lemon juice to prevent the avocado from turning brown. Add a bit of salt. Grill 2 slices of country style bread or brown the slices in a little olive oil in a frying pan. Top the slices with fresh lettuce leaves and spread the avocado over the lettuce. Add some crisp prosciutto, a few pistachio nuts and some shavings of Parmigiano Reggiano or other cheese over the top. Drizzle with a little extra virgin olive oil.
