B is for Beets!

During this pandemic, we are told to really ramp up healthy eating, get more Vitamin D and C, get more exercise and follow the rules. A lot of us working from home have to think of more than one meal a day especially if children are learning remotely. It can be boring eating the same thing but with a little imagination and help from the grocery store, you can create some delicious dishes. For lunch how about a delicious sunny yellow beet salad…even kids will like this one because they are sweet tasting and do not have that earthy taste associated with red beets.

Yellow Beet Salad
Serves 4

Dressing
¼ cup extra virgin olive oil
Juice and zest of 1 large lemon
3 tablespoons sweet pickle juice
1 teaspoon dry mustard
Salt to taste

Salad
4 small yellow beets, cooked, peeled and sliced into rounds
1 ball mozzarella cheese, cut into cubes or chunks
¼ cup shredded arugula
½ cup torn into bite size pieces radicchio
Black sesame seeds for garnish (optional)

Whisk all the dressing ingredients together until slightly thickened. Set aside

In a salad bowl combine all the salad ingredients except the sesame seeds. Pour the dressing over the salad and toss gently. Scatter the sesame seeds over the salad.
