Be Mine Valentine Bean Soup

It’s apt to be cold on Valentines Day so warm up a bowl of bean and potato soup for your sweetie.
Be Mine Valentine Bean Soup
Serves 6
Two 15 ounce cans cannellini or kidney beans drained and rinsed.
1 tablespoons olive oil
1 onion, minced
1 large clove garlic, minced
1 tablespoon tomato paste
2 medium potatoes, peeled and diced
6 cups tomato juice
1 tablespoon minced rosemary
Dash chili powder
Grinding black pepper
Salt to taste
Heat oil in soup pot; add onion and cook until wilted; add garlic and cook until it softens. Add tomato paste and mix well to coat onions and garlic. Add potatoes, tomato juice, rosemary, chili powder, pepper and salt to taste. Add the beans. Bring to a boil. Lower heat and cook covered for 15 minutes.
