Cod That’s Good!

Need a great and so easy to make fish dish good enough for company? Baked cod fillet with tomatoes, olives and onions is a fast supper in less than 30 minutes.
Mediterranean Baked Cod
2 tablespoons olive oil
1 small onion, thinly sliced
1 1/4 pounds fresh cod or haddock Juice
1 lemon plus zest
4 cherry tomatoes sliced 1/2 cup olives (your choice)
Salt and pepper to taste
Brush a baking dish large enough to hold fish in one layer with the olive oil. Spread onion over oil. Place fish over onions. Sprinkle juice and zest over fish. Add cherry tomatoes, salt and pepper and a drizzle of olive oil over the top. Bake in a preheated 400F oven for about 12 minutes or until fish is opaque looking and easily flakes when tested with a fork. Serve immediately with pan juices.
