Dog Days of Summer Chicken Salad

Sometimes even chefs dont want to cook! When its hot, I want out and so a store-bought rotisserie chicken is my answer for making this healthy chicken salad, hold the mayo! Instead I make a lemon and olive oil vinaigrette that is perfect with the addition of garden veggies, like cucumbers and tomatoes. Fresh herbs like parsley, basil and oregano give the finishing touch. Cool, delicious and no sweat!

Serves 6

4 cups cubed cooked chicken 

2 small cucumbers cut into rounds

2 cups halved cherry tomatoes

1/4 cup finely chopped red onion

2 tablespoons chopped parsley

4 tablespoons chopped basil

2 tablespoons fresh chopped oregano

Dressing

Juice and zest of 2 large lemons (about 1/3 cup juice)

1/2 cup extra virgin olive oil

1 teaspoon dry mustard

1/4 teaspoon garlic powder

1/4 cup honey 

Salt to taste

Grinding black pepper

In a bowl, combine the chicken, cucumbers, tomatoes, onion, parsley, basil and oregano and toss to combine. 

In a separate bowl whisk the salt dressing ingredients together until an emulsion forms and pour the dressing over the chicken salad and toss well, Correct the salt and pepper if necessary.
