Have you tried Thai eggplant? I saw them in an Asian grocery store and they were so cute looking that I had to try them. I usually think of eggplant as an Italian veggie but eggplants are thought to have originated in Asia. The Thai variety, one of the smallest of the species, look like small green golf balls although there are purple types too. They are very mild tasting with lots of tiny seeds and white flesh. I decided to just saute’ them in a little olive oil but then opted for sesame seed oil. I added diced red onion, slivers of garlic and a wee bit of hot red pepper flakes along with salt and pepper. I decided to bump up the flavor with the zest and juice of a Meyer lemon and fresh cilantro.
