Fast Fish Sicilian Style

A major part of Sicilian cooking is based fish and seafood. Swordfish and tuna top the list but sardines, anchovies, cuttlefish, calamari shrimp and too many others are also available. When fish is fresh, there is little one has to do to it for cooking. In the photo below, the fish fillet is placed in an olive oiled baking dish; seasoned with salt, pepper and topped with thin lemon slices, red onion, dried oregano and green olives. Drizzled with olive oil it happily bakes in a 450F oven for about 8 minutes per pound. Healthy, delicious and fast.
