Fresh Garden Salad

All that back breaking work of planting the vegetable garden is beginning to pay off! We have been enjoying lettuces since early May, and I have had a lot of fun creating all kinds of salad combinations.

Today I also picked my first quart of strawberries from our own patch. I was bent over the patch in the searing sun searching for the ripest ones, and they did not disappoint me. Delicious!

Besides that, no pesticides were used which really makes me indulge in them that much more!

My inspiration for this lettuce and fruit salad came right from the garden. I added blueberries and pears along with whole natural almonds, and I snuck in a little peppery arugula too.

The dressing? A vinaigrette with just a touch of honey. My husband Guy, who has the green thumb gave it two thumbs up!

Tutti Frutti Lettuce Salad

Serves 4

Lettuce_salad 4 cups mixed fresh lettuces (combination of arugula, Bibb, Red oak leaf and Buttercrunch or lettuces of your choice
1 cup strawberries cut in half
1 cup blueberries
1 pear sliced
1/2 cup whole unsalted almonds

Dressing

1/4 cup extra virgin olive oil
1 tablespoon white balsamic vinegar
1/4 teaspoon salt
1 tablespoon honey

Place all the salad ingredients in a large salad bowl.

Combine all the dressing ingredients in a jar and shake well to combine. Pour over salad and toss gently to coat lettuce and fruits well.
