Fried Zucchini Balls
Makes 8

1-1/2 cups shredded raw zucchini
1/3 cup flour
Salt and pepper to taste
Dash ground nutmeg
1 large egg
2/3 cup Panko breadcrumbs
2 cups vegetable oil for frying

Wrap the shredded zucchini in paper towels and set aside.

Combine flour, salt, pepper and nutmeg in a bowl. Set aside.

Place egg in separate bowl and beat with a fork

Place breadcrumbs in a separate bowl.

Place the zucchini in the bowl with the flour and toss to coat it. Shake off excess flour and transfer to the beaten egg and toss to coat well. Transfer the mixture to the Panko breadcrumbs and coat well. Gather up a small amount the size of a whole walnut with your hands and form it into balls.

Set aside.

Heat the oil in a saucepan to 375F; add the zucchini balls a few at time and fry until golden brown. Drain them on paper towels. Use as garnish for the zucchini bisque or enjoy them as a mini appetizer while still warm.
