Gluten Free Mac and Cheese

For our gluten free friends, this mac and cheese with vegetables is really delicious. What bumps up the flavor is a heaping teaspoon of hot pepper paste but that is optional. Gluten free pastas are available in grocery stores and on line. For my money, pasta made from corn flour works well.

To Serve 6

1 tablespoon olive oil
1 red onion, diced
1 clove garlic, minced
1 cup peas, fresh or frozen
1 small zucchini, diced
1 teaspoon hot pepper paste
1 cup diced fresh tomatoes
3 cups grated cheddar or Swiss cheese or a combo
1 pound gluten free pasta, cooked for 5 minutes and drained.
1 cup Half/Half

Heat olive oil in a saute pan; add onion and wilt; add garlic and soften. Add peas, zucchini and pepper paste and cook quickly for a couple of minutes. Add tomatoes; season with salt and pepper.

Combine all with pasta and Half/Half and place in casserole dish.

Bake covered at 350F for 25-30 minutes. Uncover and cook a few minutes longer.
