Beautiful looking broccolini is one of those vegetables that no serious Italian cook would be without. Full of vitamins and fiber, it is great teamed with oil cured black olives. 

After trimming the ends, rinse and place in a pot of boiling, salted water and cook without a cover until a knife easily pierces the stems. Drain and place the broccolini in a bowl of ice water; this will help to maintain its vibrant green color.  Let soak for a few minutes, then drain, dry on paper towel and set aside.  Meanwhile, warm a thinly sliced garlic clove in about 3 tablespoons of olive oil over medium heat.  Add the broccolini and cook for a few minutes in the oil. Stir in oil cured black olives, grinding of black pepper and salt to taste. Transfer to a serving dish and dust the top with grated Parmigiano Reggiano or Pecorino cheese if desired.
