How Many Ways Can You Serve A Tomato

Finally. Fresh garden tomatoes are really here. No more cardboard tasting, placid looking, paperweight tomatoes need you succumb to. Farmer markets tempt you with everything from cherry tomatoes to heirlooms that we have never heard of. Tomatoes aren’t just round or oblong anymore; no they are ribbed and wrinkled and squat too. Tomatoes are so versatile, we could never run out of ideas on how to use them. Most of us have gone beyond the slice, salt and eat tradition. Now we have smoothies with tomatoes, cakes made with tomato juice, tarts with various colors of tomatoes, gourmet BLT’s, tomato scones, tomato galette…
Still, a simple tomato salad is the most satisfying summer comfort food. Make something with summer tomatoes everyday because the season is fleeting and then it’s back to the future dreaming of the taste of real tomatoes.
Summer Cherry Tomato Salad
Serves 4
2 cups cut in half cherry tomatoes
1 cucumber, sliced
Salt and pepper to taste
1 teaspoon sugar
2 tablespoons extra virgin olive oil
1 generous tablespoon white balsamic vinegar
½ cup chopped fresh basil
½ cup crumbled blue cheese
Combine tomatoes, cucumber, salt, pepper and sugar in a salad bowl. Mix oil and vinegar together and pour over salad; toss well. Add basil and cheese; toss again.
