Kitchen Sink Soup

Well, it is back to work and the first thing I did today was a New Year’s clean out of the refrigerator! It is literally kitchen sink soup for dinner tonight and anything left over in the way of vegetables, cheese rinds, onion skins, broccoli and cauliflower cores goes into the soup pot. I cover everything with water, add tomatoes that I froze from my summer garden, a couple of bay leaves, parsley and let it go on simmer for a couple of hours. Then I strain it, add a dash of lemon juice and have a nice vegetable broth to add anything I want like tiny beef meatballs, cooked chicken pieces, and pasta. Soup from nothing is always a great way to start the new year!
