  1. Know the difference between cow, sheep, goat milk cheeses because each has a distinct flavor profile
  2. Buy from reputable cheese sellers
  3. Always buy hard and semi hard cheeses in wedges and look for the stamp on the rind that authenticates the cheese, its origins and age
  4. Store cheeses wrapped in their original waxed paper, not plastic wrap which will trap moisture. Cheese needs to breathe. Can also use parchment paper or waxed paper and seal with tape
  5. Bring all cheeses to room temperature before eating
  6. Use a cheese slicing knife to cut cheese, not table knives
  7. Use cheese rinds to flavor soups, stews and sauces
  8. Always grate your own cheese guaranteeing what you buy is the original thing and not a substitution 
  9. Store cheese in the warmest part of the refrigerator
  10. Do not freeze hard, semi soft or soft cheese; the texture and flavor will change.
