Let Them Eat Cake

It can be frustrating when the cake you made from scratch sinks your expectations. Over many blunders, I have learned what not to do when baking a cake. Here are some tips.

1. Read the recipe; assemble all the ingredients and have them at room temperature unless directed otherwise

2. Use the right pan or the batter will either overflow or sink in the middle

3. Don’t over-beat the batter unless you like a nice crack down the middle of the cake. 

4. Don’t overfill the cake pan; 3/4 full from the top is a good rule because as the cake bake and rises, it should not seep over the cake rim but be just beneath it.

5. Evenly butter the entire cake pan and line the base with parchment paper and butter the paper before transferring the batter to the pan and evenly smooth the batter.

6). Before placing the batter in the oven, give the cake pan a tap on the counter to remove any air bubbles

7. Use a cake tester inserted into the middle of the cake to test for doneness; if the tester is gooey with batter, bake until the tester comes out clean

8. Let cake cool completely before removing from the pan and use a butter knife to loosen the cake from its edges by going round the inside edges of the pan
