Thanksgiving is not really over in my house until all the leftovers are gone. Scouring the refrigerator, there was still plenty of food to choose from so I decided a turkey pot pie was in order. I diced the leftover turkey along with the carrots and parsnips; there were mushrooms too so I threw those in and I spotted a container of leftover sausage stuffing. Why not.
I mixed it all up with the leftover gravy. A few tablespoons of parsley and some fresh rosemary and the filling was ready for the crust, homemade or store bought, your choice. I fitted the crust over the top of the filling and set the pie to bake at 375F for 35 minutes until it was bubbly and the crust nicely browned. It was gobbled up in no time.
