Quality not quantity is what defines Italian cooking. The ingredients speak for themselves and need very little embellishment.

In this summery antipasto, paper thin slices of Mortadella, a finely ground and cooked pork product, the pride of Bologna, Italy, is often studded with black peppercorns or pistachio nuts. Serve it with some crispy lettuce, tomato slices and goat or mozzarella cheese. Add slices of grilled Italian bread and a drizzle of extra virgin olive oil.
