No Time to Waste

It’s starting. An explosion of garden vegetables all at once deciding to say pick me! I don’t know where to start. Everything is ripe. The bush beans cleverly hide their true green color among the leaves, making them hard to find. I don’t dare even glance at the zucchini patch because I have been there too many times before and I know what zucchini plants can do! Eggplants dangle from rigid stems and the beet tops have all flopped over. Snap beans are easy to pick and cucumber vines are racing to the end of the fence.
I harvest everything, knowing that I will give some away and thinking about what to do with all the rest.
A veggie stir fry is always a great way to use a variety of vegetables so I chop zucchini, cut tomatoes in half, add snap beans and quickly cook all in a little olive oil with diced scallions, minced garlic and a hint of red pepper flakes. Salt and pepper before serving. Basil too. Tomorrow I will deal with an explosion of eggplant and tomatoes. It’s peak season and no time to waste.
