Not Your Ordinary Cauliflower

Calling all cauliflower haters! Crunchy cauliflower steak is the dish that willmake you a fan. No odor or mushy taste. Buy a nice looking head of cauliflower and cut it in half vertically. Then cut 1/2 inch slices being careful to cut straight down and not in a sawing motion, otherwise the  “steaks” could crumble. Cut 4 and set aside. Have three shallow bowls ready. In one bowl place 1/2 flour and add 1 teaspoon salt, a grinding of black pepper and 1 teaspoon dried oregano. Mix well. Beat 3 eggs in the second bowl.  Place 2 cups Panko  breadcrumbs in the third bowl.  Coat each steak in the flour on both sides, shaking off any excess flour. Coat each steak in the beaten egg on both sides and finally coat each one in the breadcrumbs on both sides. Place the steaks on a baking sheet and place in the refrigerator uncovered for at least 2 hours,

When ready to cook, heat 1/4 cup neutral oil like grapeseed or sunflower oil in a large saute pan. When the oil begins to shimmer, add the steaks in a single layer and cook them over medium heat until browned on one side, then flip them to cook the other side. A small knife should easily piece them when they are fully cooked, Serve hot accompanied with extra virgin olive oil to drizzle over the top
