One Bowl Blueberry Cake

Here is a great little cake to make; I call it One Bowl Blueberry Cake and it is perfect for breakfast or for dessert with a scoop of vanilla ice cream but it also just stands on its own.

One Bowl Blueberry Cake

1/3 cup light olive oil
1 cup sugar
1 egg
1/2 cup milk
1/2 cup Half/Half
2 cups unbleached all purpose flour lightly sprinkled into a dry measuring cup
3 teaspoons baking powder
1 teaspoon almond extract
1 cup blueberries

Preheat oven to 350F

Grease an 8 inch square pan

Beat all the ingredients, except the blueberries in order given in one large bowl until light and fluffy. Fold in the blueberries and transfer to the baking pan. Bake for 30-40 minutes or until a cake tester comes out clean and the cake is golden brown and springy to the touch. Cool then dust heavily with confectioners sugar.
