Pick a Pack of Peppers

It’s been a great garden season for hot weather vegetables like eggplant, tomatoes and those deep red sweet peppers. My garden is teaming with sweet red peppers and they are perfect for grilling. Throw them whole on a pre-heated grill or use your broiler; when blackened all over, remove and let cool. Peel away skin and wipe out the seeds with a paper towel; do not rinse the seeds away under water because the flavor goes with the seeds. Use them in sandwiches, marinate them in oil, vinegar and garlic, use them in sauces or to mix into other vegetables.
