Pomegranates, the Fruit of Champions!

Pomegranates (melagrane) are dearly beloved in Italy where they grow beautifully suspended from stems on low growing bushes. They are best eaten out of hand but I like to experiment with them in cooking and use them for sauces and desserts.

This oven roasted pork tenderloin with pomegranate sauce gets its superb flavor from a quick sauce made from a combination of pomegranate juice and orange marmalade
