Put A Bow On It

Bow tie pasta known as farfalle (butterflies) in Italian, pair beautifully with shiitake mushroom sauce because they are meaty and cling beautifully to the pasta sinking into all the little groves.

For the sauce, fry 1/4 pound diced pancetta in 1 tablespoon olive oil until the pancetta starts to brown. Stir in 1 cup diced onion and cook until it begins to wilt. Stir in 1 teaspoon minced garlic and 1/2 pound diced shittake mushrooms and cook until the mushrooms start to brown. Raise heat to high and stir in 1/2 cup white wine and allow most of it to evaporate. Lower the heat and stir in 1 cup light cream and 1 cup grated Parmigiano Trggiano cheese. Add salt to taste and a good grinding of black pepper. Stir in minced parsley if desired.

Set aside and keep warm.

Cook 3/4 pound  bow tie pasta until al dente. Drain and transfer pasta to toe sauce along with 1/4 cup of the pasta water. Mix everything well and serve hot.
