Quick Chicken Cutlet Supper

Chicken cutlets cook in just a few minutes. Ratchet up the flavor by rubbing them with your favorite spices like rosemary, parsley, garlic salt and pepper. Cook 4 cutlets (about 1 pound) quickly (about 2 minutes) in a couple tablespoons of butter or olive oil. Remove them from the pan and pour in 1-1/2 cups of chicken broth and use a spatula to scrape up the drippings left in the pan; this is where the flavor lies. When broth is just under the boil, add ½ cup Half/Half and stir well, Return cutlets to the pan with any juices and heat slowly until hot. Correct seasonings, Serve over rice, farro, mashed potatoes or polenta.
