San Daniele DOP Ham

My recent visit to San Daniele in the region of Friuli Venezia Giulia was a mission and that was to see the process of making the classic San Daniele DOP ham.

The delicate-tasting, salt and air-cured ham comes from the thighs of pigs raised in the region, and I was lucky enough to enjoy it at the casa del prosciutto: right at the factory where it is made and cured.

Served in tissue paper-thin slices along with pickled vegetables, it was exquisite.
