So it’s the beginning of February and probably a lot of us have broken those enthusiastic New Year resolutions we made. Loosing a few pounds is always right up there at the top of the list. How about adding something really healthy to your diet to help you do that? In season kale and Brussels sprouts are a winning combination in this serious and filling salad loaded with vitamins and fiber.
Kale and Brussels Sprouts Salad
2 cups thinly sliced Brussels sprouts (use small ones)
2 cups shredded kale
1/2 cup cubed cheese (your choice)
4 tablespoons extra virgin olive oil
2 tablespoons spicy grainy mustard
1 tablespoon honey
1/2 teaspoon salt
Grated zest one large lemon
Handful of nuts
Combine the Brussels sprouts, kale and cheese in a bowl
In a small bowl, whisk together the olive oil. mustard, honey and salt until well blended. Stir in lemon zest. Pour dressing over salad and mix well. Add nuts and serve.
