Simple and Sassy Summer Chicken Salad

Love chicken salad but don’t want to fuss with roasting a bird?

Buy a ready cooked rotisserie chicken; remove the bones and cut the meat into chunks. Place in a large bowl and add 1 cup each diced celery and zucchini. Toss in 1cup cherry tomatoes, cut in half. Add 1/2 cup sliced radishes and a handful of raw sugar snap peas. Add 1/2 cup minced red onion, 2 tablespoons each fresh minced parsley, tarragon, thyme and basil. For a non-mayo dressing that is healthy and tasty, whisk together in a bowl 1 1/2 cups plain low-fat yogurt, 1/3 cup honey mustard, 3 dashes hot sauce and 3 tablespoons extra virgin olive oil. Season with salt and pepper to taste. Mix dressing into chicken mixture and combine well.

Transfer to serving dish and sprinkle with toasted pecans or other nuts of your choice. Serves 8 Save the carcass to make soup.
