Snowy Day Chicken Dinner

Here’s a great no fuss dinner for a snowy day: Oven cooked chicken in milk and half and half. (It makes a great sauce.)

Just season whole chicken (about 4 pounds) with salt and pepper and brown well in 2 tablespoons of olive oil in a deep pot or dutch oven.

Preheat oven to 375F.

Scatter 5 or 6 garlic cloves in the pot with the chicken and 2 tablespoons of minced fresh parsley and one onion quartered. Combine one cup milk and one of half /half and pour into pot.

Cover tightly and bake for about 1 hour; uncover and add 2 large potatoes cut into wedges; cover and continue cooking for about 30 minutes or until potatoes are tender. Add a side of broccoli and dinner is ready.
