Summer Cherry Tomato Salad

So often when people think of how to use tomatoes, they think of sauces, soups, and other warm meals. But instead of heating up the kitchen this summer, I recommend using all those tomatoes from your garden to cool off with a fresh cherry tomato salad that’s perfect for an August picnic or cookout.
Summer Cherry Tomato Salad
Serves 4
2 cups cut in half cherry tomatoes
1 cucumber, sliced
Salt and pepper to taste
1 teaspoon sugar
2 tablespoons extra virgin olive oil
1 generous tablespoon white balsamic vinegar
½ cup chopped fresh basil
½ cup crumbled blue cheese
Combine tomatoes, cucumber, salt, pepper, sugar in a salad bowl. Mix oil and vinegar together and pour over salad; toss well. Add basil and cheese; toss again.
