It’s fresh fruit season so get those juicy peaches, raspberries and blackberries while you can! A great way to serve them is in a mixed fruit salad with a no cook raspberry sauce. Also good topped with vanilla ice cream or a dollop of whipped cream. 

Serves 4

3 cups raspberries

1 tablespoon lime juice

2 tablespoons honey

1/2 teaspoon grated ginger

1 cup blackberries

2 cups peeled and sliced peaches

In a bowl, mash 2 cups of the raspberries with a fork and transfer them to a fine mesh sieve placed over a bowl. Press on the mashed berries to release their juice.Discard the solids, To the juice add the lime juice, honey and ginger and mix well. Divide the remaining raspberries, blackberries and peaches among 4 dessert glasses or goblets. Evenly pour the raspberry sauce over the glasses, Garnish with mint.
