Thanksgiving Butternut Squash Soup

Thanksgiving is right around the corner, and if you’re not in charge of making the turkey, you’re probably in charge of bringing a side dish. While everyone has their favorite mashed potatoes or green bean recipes, why not bring something a little bit different this year? This butternut squash soup perfectly complements all the Thanksgiving staples.
Thanksgiving Butternut Squash Soup
Serves 6
4 cups cooked butternut squash
2 parsnips, peeled, cut into small pieces and cooked covered in 1 cup water
¼ cup maple syrup
¼ teaspoon ground nutmeg
¼ teaspoon cinnamon
Salt to taste
2 ½ cups evaporated milk
Puree the squash, cooked parsnips and their water, maple syrup, nutmeg, cinnamon and salt together until smooth. Mix in the evaporated milk until smooth. Heat and serve hot.
