The Perfect Spatchcocked Chicken

A spatchcocked chicken takes less time to cook than a whole one. For this recipe, the chicken backbone has been removed allowing the chicken to lie flat on the pan for even heat distribution.
Use a sheet pan and dry rub the chicken with your favorite spices; place it on a lightly oiled pan and surround it with your favorite cut up vegetables like peppers, summer squash., onions and potatoes. Bake at 350F until an internal temperature reading of 165F is reached, depending on size of chicken.Easy cooking! One pan cleanup!
