The Thighs Have It!

Make a quick supper with chicken thighs. Inexpensive, juicy and full of flavor, they can be ready in a flash.

Use your favorite store bought or homemade rub. I like a combination of minced garlic, oregano, salt, pepper and dried pepper flakes in a one-to-one ratio. Figure on one tablespoon of rub per thigh.

Dry the meat with paper towel and add rub to each one on both sides. Set aside.

Heat two tablespoons avocado or sunflower oil in a saute pan until hot. Add a few fresh basil leaves, and ensure the thighs are browned well on all sides. Cook until 165F internal temperature is reached.

Add juice of one large lemon and serve.
