The Thighs The Limit

Oh, yes, many cooks are discovering the merits of cooking with chicken thighs; they are very versatile and take to stewing, roasting, pan frying and my favorite way to have them, barbecued. They can make a really quick and tasty meal. To grill them, start the day before and marinate them in your favorite barbecue sauce. Next day fire up the grill and cook them over indirect heat for about 8 minutes. I add vegetables wrapped in foil, like asparagus along side the thighs and dinner is ready in less than twenty minutes. Add a salad and a glass of wine and life and dinner is good.
