Tomato Time

What home gardeners wait for all summer long are tomatoes, cherry, beefsteak, heirloom, plum, cherry bombs and the list goes on. All of those and more are in my garden and ready to be picked. No placid, hard as a rock store bought tomato in a plastic container can compare to homegrown. No garden? No problem. Take advance of local farms, farmers’ market or your grocer carrying local foods. Eat healthy, in season foods.

My favorite sandwich for summer is, of course, a tomato sandwich! Start with good quality focaccia bread. Cut beefsteak tomatoes into thick slices, Salt the slices and let them sit on a paper towel lined plate for 5 minutes. Have a few lettuce leaves ready and a couple leaves of fresh basil. Split focaccia bread in half and drizzle each half with good extra virgin olive oil. Place lettuce leaves over one slice of the bread. Top with 2 or 3 tomato slices. Place basil on top of tomatoes and cover with second slice of bread. Cut in half. No words.
