These sweltering days call for boycotting the kitchen. Even standing at the outdoor grill is just adding fuel to the fire. And darn, the heat kills your appetite too. My answer is to head to your air-conditioned grocery store and get one of those rotisserie chickens. It will set you back less than ten bucks but that is chicken feed compared to what going out to dinner would cost.

Shred the chicken and save the bones for soup. Place the chicken in a salad bowl and open your frig. Just about anything in there can go into chicken salad; think celery, shredded carrot, cucumber, tomato, cheese, olives, pickles and those leftover chickpeas you were wondering what to do with. Make a jazzy dressing or use your favorite bottled dressing.

Summer Sizzler Chicken Salad
Serves 4 to 6

One store bought rotisserie chicken, shredded
1 small carrot grated
1 cup sliced cucumber
½ cup small broccoli florets
½ cup thinly sliced onion, shallot or spring onions
½ cup minced fresh tarragon, mint or basil or combo
1 cup halved cherry tomatoes

Dressing

½ cup low fat mayo
¼ cup spicy sweet mustard
2 tablespoons pickle juice or white vinegar
Dash Worchester sauce
Salt and pepper to taste
Grated zest one lemon

Combine all the ingredients in a salad bowl except the dressing; in a separate bowl, whisk the dressing ingredients together and pour over chicken mixture; toss well.
