What To Know About Gnocchi

There are many versions of gnocchi from the classic potato to squash, spinach and even prune gnocchi but my favorite is ricotta gnocchi, lighter tasting and easy to make. There is no one exact recipe since ricotta cheese can be wetter or drier depending on brand and the type of flour used will also determine when the dough is just right. Here are a few tips for making ricotta gnocchi:
- Drain the ricotta well in a colander
- Use an all-purpose or a fine durum semolina flour, lightly spooned into a dry measuring cup
- Go for a ratio of 1-1/2 cups of flour to 1 pound of ricotta cheese to create a dough that is not sticky.
