What's Cooking This Weekend?

Memorial Day means two things in the Esposito household: pausing to give thanks for those who have sacrificed for our freedom and for that I will be wearing my Veteran’s poppy, hoisting the flag on the house, and attending the Memorial Day parade.
It also means cooking, and lots of it. Guy and I will be spending plenty of time in front of the grill this weekend.
Here’s what’s on tap:
Mozzarella, Prosciutto, and Tomato Skewers. A cool, fresh, no-cook appetizer to tide everyone over until the main course.
Homemade Italian Sausage. Nothing compares to the freshness of homemade sausage and it doesn’t take long to make, about a half hour will get you five pounds which you can freeze if you’re not going to use it all at once. While they are grilling, throw on some sweet bell pepper halves and onion halves because there is nothing like suasage and peppers with onions. That’s real summer eating!
Mint Potato Salad. If you like potato salad -and we certainly do in my house – try this refreshing twist from my Nonna Galasso.
Chocolate Olive Oil Cake. It’s a breeze to make. Serve it up with a scoop of ice cream and call it a day.
