Winter’s Best Blizzard Salad

Still digging out from the recent blizzard? I know.  It is such an interruption in our lives but it is February and the best way to cope is to  stay cozy and cook!  Even if it is that time of the year when it is really slim pickings at the grocery store and at winter farmers markets, you can liven things up a bit with this wonderful salad made with ingredients in season. 

Winter’s Best Blizzard Salad

Serves 6

Dressing
2 tablespoons honey
4 tablespoons white balsamic vinegar
6 tablespoons extra virgin olive oil
½ teaspoon salt
Pinch paprika

6 whole dried figs, stemmed and soaked in warm water for 20 minutes, then drained and each cut into quarters
1 small bunch kale, leaves only, washed, dried and shredded
1 small carrot, shredded
1 cup chopped fennel
2 Pink Lady apples, washed, cored, thinly sliced and tossed with the juice of one lemon
½ cup crumbled Blue Cheese
¼ cup natural whole pistachio nuts

In a small bowl, whisk together the honey and balsamic vinegar until smooth. Whisk in the olive oil until the ingredients are smooth. Add salt and paprika. Set aside.

In a salad bowl combine the kale, carrot and fennel. Add the apples with the lemon juice and toss. Add the dressing and toss again. Add the figs, cheese and nuts.
