Zucchini Wedges: An Easy Side

You don’t need to try too hard to have delicious sides for your holiday table. Zucchini wedges sautéed quickly in a little olive oil, with red onion and roasted garlic salt makes for effortless work and delicious eating. Give yourself a break.
Sautéed Zucchini Wedges
Serves 4
2 tablespoons olive oil
1 small red onion, peeled and cut into thin lengthwise pieces
2 medium zucchini cut in half lengthwise then in 3 -inch diagonal slices
1 -1/2 teaspoons roasted garlic salt
Heat oil until hot; lower heat and add onion. Cook for a couple minutes. In a bowl toss the zucchini wedges with the garlic salt and add to the pan with the onion. Cook over medium heat until the zucchini starts to brown. Cook until a knife easily pierces the wedges. Serve hot.
