Anna Nurse's Lima Beans

Serves: 8

This dish is the creation of Anna Amendolara Nurse, a New York cooking teacher.

Directions

  1. Pick over, rinse, and soak,
  2. 1 pound large dried lima beans.
  3. Drain. Combine in a large saucepan with water to cover by 2 inches. Bring to a boil. Reduce the heat and simmer, covered, until the beans are almost tender, 30 to 50 minutes. Drain, reserving 2 cups of the cooking liquid (add water if necessary to make 2 cups).
  4. Preheat the oven to 300°F.
  5. Combine the beans and cooking liquid in a 3-to 4-quart casserole along with:
  6. 1 large onion, chopped
  7. 8 ounces thick-cut bacon, diced
  8. 1/2 cup chili sauce
  9. 1/3 cup dark molasses
  10. 1 tablespoon cider vinegar
  11. 2 teaspoons salt
  12. 1/2 teaspoon dry mustard
  13. Cover and bake 2 hours, then uncover and bake until tender, about 30 minutes.

I have been looking for a recipe for years for Lima Beans. My late Father, and Grandmother used to make them.I only remember tasting Dad’s one time but never forgot the taste.I have tried a few recipes for this same dish but none was ” as good as Dad’s”. Until today.Thank you so much. I made it today for Mom and I. We were blown away with how good this recipe is. Mom is having Family over this Sunday. We will be serving this delicious recipe. I will be handing this recipe down to both of my Daughters. Thanks again!
