Winter is the time when we want good comfort foods to warm and satisfy us. Here is a recipe that literally is a breeze to make; everything goes into the pot at once. You can just forget it for the next 35 to 40 minutes or make it ahead and reheat it.
Serve it as is, or with rice, polenta or mashed cauliflower.
- 1- Three-pound chicken cut into serving pieces
- 6 tablespoons butter
- 1 cup dry white wine
- 1 cup milk
- 1 cup tomato juice or vegetable juice cocktail
- Salt and pepper to taste
- Place everything in a large Dutch oven or saucepan. Simmer uncovered for 35 to 40 minutes, stirring occasionally. Taste for seasoning.
