  • 2 ounces grated Parmigiano Reggiano cheese
  • 2 large eggs
  • 1 tablespoon fresh chopped mint
  • Salt and pepper to taste
  • 1 cup Panko bread crumbs
  • Canola oil for frying
  • Greens, radicchio, and fava beans for serving(Optional).
