- INGREDIENTS1 1/4 pounds Yukon Gold potatoes
- 2 ounces grated Pecorino cheese
- 2 ounces grated Parmigiano Reggiano cheese
- 2 large eggs
- 1 tablespoon fresh chopped mint
- Salt and pepper to taste
- 1 cup Panko bread crumbs
- Canola oil for frying
- Greens, radicchio, and fava beans for serving(Optional).
