Rice and Mixed Vegetable Medley


  • 1 cup brown rice
  • 4 tablespoons extra virgin olive oil
  • 12 Oneounce steam in bag frozen mixed vegetables
  • 1/2 cup grated cheese
  • Salt and pepper to taste


  1. Serves 4
  2. Cook the rice in 2 1/2 cups of boiling salted water until tender.
  3. Drain and place in bowl.
  4. Steam the vegetables and add to rice; mix with olive oil and stir in cheese, salt and pepper
