Rice and Mixed Vegetable Medley
- 1 cup brown rice
- 4 tablespoons extra virgin olive oil
- 12 Oneounce steam in bag frozen mixed vegetables
- 1/2 cup grated cheese
- Salt and pepper to taste
- Serves 4
- Cook the rice in 2 1/2 cups of boiling salted water until tender.
- Drain and place in bowl.
- Steam the vegetables and add to rice; mix with olive oil and stir in cheese, salt and pepper
